Not the easiest of birds to pluck. I've had to skin and fillet them now as the skin kept tearing

I'm never doing it again, waaaay too messy. Next time I'm gonna ask for him to do it.

brilliant! we decided to do pheasant for xmas dinner this year and ordered a brace today. your recipe sounds really good, we'll be giving this a go.
